What would be more refreshing after a hot afternoon house hunting than a cup of cold refreshing Gazpacho to revitalize your body and give energy to write that offer!
Here's a recipe that I absolutely love! All you need is a blender and you're good to go!
Watermelon and Cucumber Gazpacho
1 (3lb) seedless watermelon diced (about 5 cups)
1 small english cucumber, seeded, diced (about 1 cup)
1 medium red bell pepper seeded, diced (about 1 cup)
1 medium yellow bell pepper seeds, diced (about 1 cup)
1 jalapeno chile, seeded, minced
3 inner celery ribs, diced (about 1/2 cup)
1/2 small red onion, diced (about 1 cup)
1/4 cup chopped fresh mint
3 tbsp fresh lime juice
2 tbsp red wine vinegar
1/4 tsp salt or to taste
Puree 4 cups of watermelon in a blender until smooth. Transfer to a large bowl. Add remaining 1 cup diced watermelon to the blender withrest of the ingredients and blend until smooth. Transfer mixture to the bowl with the watermelon, mix and check seasoning. Refrigerate at least 1-4 hours until chilled. Pour soup to bowls and decorate with small diced cucumber, feta cheese and toasted pumpkin seeds. Enjoy!
